I tasted the best guacamole with homemade tortilla chips at Rosa Mexicano, New York, and then again another amazing version at Dos Caminos, New York. I can’t resist visiting each trip but had to figure out how to make my own yum guacamole.
I can’t make those amazing homemade tortilla chips (that I cant stop eating) yet, but I can say that I have managed to whip up my own version of homemade guacamole that is easy, yummy and my family simply loves. Our friends love it too. The best part is that my little daughter can make it herself now and is so proud. No more jars of terrible packed guacamole.
Here is the recipe, give it a try and let me know how it goes. This vegetarian, gluten free, paleo recipe is a winner.

1 garlic clove
3 tbsp olive oil
2 ripe avocados
1 tomato chopped
salt to taste
Tip: At the end, add chopped cilantro and/or chopped jalapenos for that extra awesome kick.
1. In a hand blender, chop the shallot and garlic clove. Scoop out the avocados into the blender. Add salt to taste and olive oil and whiz, until the paste is coarse. I use the blender so that my little daughter can help. You can also mash the avocado with the onion and garlic, in a larger bowl.
2. Add chopped tomato, lemon juice of half a lemon, a dash of more olive oil and salt to taste. Serve with tortilla chips.
