This recipe was one of the first I ever learnt to cook, all on my own, when I was a teenager. My mum was proud and I couldn’t believe my eyes. I still make this dish once in a while. It tastes fantastic with roti or naan.
Believe it or not, this recipe is pretty straight forward to make and super comforting to eat. If you have been reading my blog, you will notice that I am a sucker for easy, painless, quick, yet – great looking and tasting food. This one ticks all those boxes.
Feeds: 3 hungry people | Prep time: 10 mins | Cook time: 30 mins
INGREDIENTS:
2 large aubergines chopped
2 tbsp oil
1 tsp turmeric powder
1/2 tsp kalonji or onion seeds
150 gms plain yogurt
1/2 tsp paprika or chilli powder
1 tsp cummin powder
1 large onion chopped
salt to taste, and a pinch of sugar
INSTRUCTIONS:
1. Cook aubergine in a pan until soft with a drizzle of oil. And set aside.
2. Heat oil in a deeper pan, add kalonji and later onion. Cook until onion turns golden. Add all the spices, salt and sugar and cook until oil separates. Add yogurt and stir for 1 minute. Add aubergine and cook until tender. Serve with roti or naan.
