This is one happy salad, bursting with color and flavor. Truth be told, I have never cooked halloumi before, so it was a bit of a gamble. We all loved the outcome. It was impressive, delicious and definitely a recipe my family wants me to repeat.
Its also kid friendly, ie. my 5 year old monster helped make it and wiped out her plate as well 🙂 #happymommy
Hint: This cheese is a bit salty and fantastic if grilled too or as a BBQ side dish.

Feeds: 3 hungry people | Prep time: 10 mins | Cook time: 5 mins
INGREDIENTS:
1 tsp olive oil
400 gms (1 packet) halloumi drained and sliced
1 bundle of fresh lettuce, roughly shredded
1 large tomato chopped
2 beetroot precooked and chopped
50 gms of walnuts, roughly handcrushed
a dash of balsamic creme
drizzle of olive oil
salt to taste
Hint: This cheese from Cyprus is naturally salty so don’t add salt to your salad, instead serve on the side.
INSTRUCTIONS:
1. Heat nonstick pan, add olive oil and fry halloumi cheese slices. Fry on both sides until golden brown.
2. In your individual salad bowls – arrange lettuce, tomatoes, walnuts, beetroot. Please fried halloumi cheese on top and drizzle with balsamic creme and olive oil.
Hint: serve this when the halloumi is warm, it wont taste the same re-heated or after you refrigerate.
