Easy Homemade Guacamole

    I tasted the best guacamole with homemade tortilla chips at Rosa Mexicano, New York, and then again another amazing version at Dos Caminos, New York. I can’t resist visiting each trip but had to figure out how to make my own yum guacamole.

    I can’t make those amazing homemade tortilla chips (that I cant stop eating) yet, but I can say that I have managed to whip up my own version of homemade guacamole that is easy, yummy and my family simply loves. Our friends love it too. The best part is that my little daughter can make it herself now and is so proud. No more jars of terrible packed guacamole.

    Here is the recipe, give it a try and let me know how it goes. This vegetarian, gluten free, paleo recipe is a winner.

    Feeds: lots of hungry people | Prep time: 10 mins | Cook time: 0 mins

    INGREDIENTS:
    1 shallot
    1 garlic clove
    3 tbsp olive oil
    2 ripe avocados
    1/2 lemon
    1 tomato chopped
    salt to taste

    Tip: At the end, add chopped cilantro and/or chopped jalapenos for that extra awesome kick.

    INSTRUCTIONS:
    1. In a hand blender, chop the shallot and garlic clove. Scoop out the avocados into the blender. Add salt to taste and olive oil and whiz, until the paste is coarse. I use the blender so that my little daughter can help. You can also mash the avocado with the onion and garlic, in a larger bowl.
    2. Add chopped tomato, lemon juice of half a lemon, a dash of more olive oil and salt to taste. Serve with tortilla chips.

    A wonderful weekend in MALTA – things you shouldn’t miss.

    This is the most popular island in the Mediterranean but don’t ask me why, we hadn’t visited yet. In winter, we are always chasing sunshine at awesome holiday destinations. Malta topped that list this year for us and off we went on a short weekend break. This place isn’t just beautiful and a stone’s throw from Sicily but also packed with art, history, character and beautiful architecture. Very fascinating.

    Here are some tips and tricks if you are planning a trip to beautiful Malta:

    Best time to visit Malta is April to June. The weather is great and its not too crowded.

    Getting around: We hired a car after reading many blog articles, but after our trip there, we recommend not hiring a car if you there just for the weekend. We used an app for taxi’s called Taxify. And it was super, the drivers came by in minutes. They were super nice and friendly, not too expensive, gave us history and local recommendations – and we didn’t have to worry about over paying or parking πŸ™‚ Don’t use Maltese white taxi’s. If you stay longer and outside the main cities, then renting a car might be a good idea.

    We recommend using Taxify (taxi app) instead of white taxi’s in Malta.

        Valletta: This capital city is stunning and absolutely packed with art, history, culture, great food and very nice people. Grand Masters had a field day here and left so much to see behind πŸ™‚ It has been named European Capital of Culture and easily one of the most historic places we have ever seen. Here is your list for Valletta:

        • View inside St. John’s Co-Cathedral.
        • Famous Carvaggio painitng of St. John the Baptist @ St. John’s Co-Cathedral.
        • St. John’s Co-Cathedral: This Cathedral dates back to 1533 and is the most spectacular church we have ever seen. The art donated by Grand Masters and Knights took our breath away. Go early so that you can skip the crowds. The highlights to us were the paintings on the ceiling and the-much-talked-about painting of the beheading of St. John the Baptist – this is the largest and only signed painting of Carvaggio in the world. Every painting is a masterpiece.
        • Upper Barraca Gardens: a public garden  with panoramic views of the Grand Harbor
        • The streets of Valletta: Walk the streets or take the tourist train to take in the city, the waterfront, its beauty, culture. Pause to take a picture of the cities famous colored doors and balconies.
        • Stop at a local cafe: Stop for a nice glass of wine with lunch or a famous Maltese pastizzi at a local cafe. We liked and recommend Cafe Cordina. We also absolutely loved our local Maltese dinner (complete with grandmother style cooking) at Legligin which came highly recommended by locals.

        Food: Maltese food is a direct reflection of its history, showing very strong influences of Italian, English, Spanish, French and other Mediterranean cuisines. Don’t miss Maltese pastizzi, gelato’s, Italian food. The 2 places I mentioned above are good starting points. If you go for dinner, make a reservation in advance.

        Mdina: We saw Valletta in the first half of the day, had lunch at Cafe Cordina and then took a taxi to Mdina. This fortified city is majestic, serene and beautiful. This is known as the silent city, and there are boards everywhere to remind visitors to keep it down. Cars and bikes aren’t allowed into the city except for residents. We walked through the street in awe.

        Marsaxlokk: This tiny fishing village is very well known especially for its picturesque views. If you go on a Sunday morning, get a nice coffee (may be with a Cannoli or 2), and then walk down the Sunday Market. We bought fresh capers for home and some beautiful colorful glass wear. The colorful traditional Maltese fishing boats seen here, are one of the symbols of Malta. 

        • Blue Grotto

        Blue Grotto: This place is not too far from Marsaxlokk and is known for its beautiful unusual rock formation and bright blue water if its sunny. This place also has a number of sea caverns. If the weather is good, you can take a boat ride into these caves. Unfortunately a storm was coming in and we couldn’t go. But this is definitely on our list for next time.

        St. Julian’s: This place is alive all day and all night. We stayed here and absolutely loved it.

        Due to lack of time this trip, we didn’t get a chance to visit Gozo, Comino, Hagar Qim temples, and Popeye’s village. We heard so much about it from the locals, so we plan to go back again and see them. Don’t miss these 4 places.

        Masala Aubergine

        This recipe was one of the first I ever learnt to cook, all on my own, when I was a teenager. My mum was proud and I couldn’t believe my eyes. I still make this dish once in a while. It tastes fantastic with roti or naan.

        Believe it or not, this recipe is pretty straight forward to make and super comforting to eat. If you have been reading my blog, you will notice that I am a sucker for easy, painless, quick, yet – great looking and tasting food. This one ticks all those boxes.

        Feeds: 3 hungry people | Prep time: 10 mins | Cook time: 30 mins

          INGREDIENTS:
          2 large aubergines chopped
          2 tbsp oil
          1 tsp turmeric powder
          1/2 tsp kalonji or onion seeds
          150 gms plain yogurt
          1/2 tsp paprika or chilli powder
          1 tsp cummin powder
          1 large onion chopped
          salt to taste, and a pinch of sugar

          INSTRUCTIONS:
          1. Cook aubergine in a pan until soft with a drizzle of oil. And set aside.
          2. Heat oil in a deeper pan, add kalonji and later onion. Cook until onion turns golden. Add all the spices, salt and sugar and cook until oil separates. Add yogurt and stir for 1 minute. Add aubergine and cook until tender. Serve with roti or naan.

          The BEST of Madrid – a weekend getaway.

          This all stems from a wonderful weekend in Madrid. I had limited time and wanted to make the most of it. So I picked a list of things to do that suited me, and likely will work for you too. I highly recommend that you don’t miss anything from the list below. If you have more time you can pace yourself out, and grab a few more sangria’s and tapas on the way.

          CHOCOLATERIA SAN GINES: This chocolate serves the best churros and the most awesome hot chocolate ever! I walked there from my hotel the InterContinental Madrid (super hotel BTW), soon after I arrived (yeah I couldn’t wait :)). Its super popular, so you might have to wait in a line for your turn, but its worth the wait.

          CIRCULO DEBELLAS ARTES: Soon it was apero time, so I headed out with my friend to the rooftop bar at Circulo Debellas Artes. The view and sunset from this place is simply spectacular. The cocktails are good too. This place is right near the most famous Metropolis building.

          PUERTA DE ALCALA: We walked next to Puerta de Alcala. This monument is the first modern post-Roman triumphal arch built in Europe and is located in the Plaza de la Independencia in Madrid, Spain. Fun fact: Its older that Arc de Triomphe in Paris and Brandenburg Gate in Berlin.

          ROYAL PALACE OF MADRID: This palace is the largest in palace in Europe and the official residence of the Spanish Royal Family at the city of Madrid . You can enter by paying a nominal fee.

          CATEDRAL DE LA ALMUDENA: This catholic cathedral is stunning inside. It has a crypt that is equally pretty and houses a 16th-century image of the Virgen de la Almudena.

          MERCADO DE SAN MIGUEL: This covered market was originally built in 1916 and is very charming. Its perfect distance from the royal palace and cathedral to deserve a nice Sangria and delicious tapas.

          GRAN VIA: This is the main, biggest and coolest shopping street in Madrid. If you are a shopaholic, avoid this one πŸ™‚ Psst – but may be only sneak a quick peak into El Cortes Engles Outlet store at Calle de la Abada, 5, 28013 Madrid, Spain.

          RETIRO PARK: It was a sunny day, so I took my book and next strolled down to Retiro Park. This park is massive and has so many attractions and things to do in it. I just stuck to awesome tapas, sun and great wine.

          PALACIO DE CIBELES: while walking to Retiro Park I crossed the Palacio de Cibeles. This beautiful palacio is the headquarters of the Madrid City Council and the home of CentroCentro.

          PLAZA MAYOR: This is one of the most popular squares in Madrid. It was once the centre of Old Madrid.

          FLAMENCO DANCE: You can’t leave Madrid without catching a show of Flamenco dancers. The Jungle Jazz Club is a good place to go to, and catch a good dinner at the same time.

          Delicious and Easy Sticky Chicken Wings

          I tried this at a BBQ party for the first time and absolutely loved it. This dish is shamefully easy and a hot favorite at home. I have taught my 5 year old how to make it and she calms with this she is the best ‘cooker’ in the world. This self-proclamation is too adorable and who cares about being grammatically correct.

          This recipe is pretty versatile in terms on cooking method. I normally make it in the oven but you can also throw them on the BBQ grill too. Either way this is a no-fail recipe.

          Feeds: 3 hungry people | Prep time: 10 mins | Cook time: 30 mins

          INGREDIENTS:
          1 tbsp olive oil
          500 gms chicken wings
          1 tbsp honey
          2 tbsp tomato ketchup
          2 tbsp soy sauce
          1/2 tsp paprika powder
          1 garlic clove chopped
          drizzle of olive oil
          salt to taste

          Oven: I prefer to use a baking dish instead of baking paper, as its quicker to clean up.

          INSTRUCTIONS:
          1. Mix all ingredients (except chicken) together in a large bowl. Toss the chicken into this mixture and marinate for at least 30 minutes in the fridge.
          2. Pre-heat oven at 180Β°C/350Β°F. Put chicken in a baking dish and bake for 30 mins. When the top of the chicken is crispy and caramelized, then turn each chicken piece over, so that the other side looks the same too.  Serve with a delicious salad and oven roasted potatoes.

          BBQ: If you try this recipe out on the BBQ, put baking foil on the grill of your BBQ, before putting the chicken on, to cook.

          Super Easy Halloumi Salad

          This is one happy salad, bursting with color and flavor. Truth be told, I have never cooked halloumi before, so it was a bit of a gamble. We all loved the outcome. It was impressive, delicious and definitely a recipe my family wants me to repeat.

          Its also kid friendly, ie. my 5 year old monster helped make it and wiped out her plate as well πŸ™‚ #happymommy

          Hint: This cheese is a bit salty and fantastic if grilled too or as a BBQ side dish.

          So here if the recipe for you to try out. Let me know how it goes.

          Feeds: 3 hungry people | Prep time: 10 mins | Cook time: 5 mins

          INGREDIENTS:
          1 tsp olive oil
          400 gms (1 packet) halloumi drained and sliced
          1 bundle of fresh lettuce, roughly shredded
          1 large tomato chopped
          2 beetroot precooked and chopped
          50 gms of walnuts, roughly handcrushed
          a dash of balsamic creme
          drizzle of olive oil
          salt to taste


          Hint: This cheese from Cyprus is naturally salty so don’t add salt to your salad, instead serve on the side.

          INSTRUCTIONS:
          1. Heat nonstick pan, add olive oil and fry halloumi cheese slices. Fry on both sides until golden brown.
          2. In your individual salad bowls – arrange lettuce, tomatoes, walnuts, beetroot. Please fried halloumi cheese on top and drizzle with balsamic creme and olive oil.


          Hint: serve this when the halloumi is warm, it wont taste the same re-heated or after you refrigerate.

          Travelling to Cuba – from the eyes of an ‘all inclusive’ traveler

          Cuba has been on top of our bucket list forever, so in 2018 we decided to pamper ourselves and book an all-inclusive Christmas holiday break to Cuba. It was an exciting trip for the 3 of us, because not only we would have a sunny break while everyone freezes back home but also our little princess was celebrating her 5th birthday that holiday on New Years eve.

          This was a perfect holiday for a lazy holiday planner like me πŸ™‚

          We flew directly to Varadero, Cuba and selected a resort where everything was included and planned for.Β  We chose Varadero over Havana because we wanted a hotel right on the beach, rather then in the heart of the city. Varadero has its own airport too, so it was a short drive to the hotel.

          While booking our trip we noticed that there was not much input and guidance on what to consider and prep for as an ‘all-inclusive holiday traveler’. So here are some points that you might find helpful as you jet set to a lovely sunny break.

          I must add that this was our best holiday ever!

          Select your timing to go

          Christmas holiday break is very popular is Cuba because its not too hot and humid, clear blue sky and warm sea water. This holiday good period carries on until March. Summers get very warm. Avoid August through October because that is hurricane season.

          Select your hotel

          Take some time to actually look through all your hotel options. Especially take the reviews on that hotel at the end of the page very seriously. The number of stars of the hotel is pretty meaningless and not consistent with what you might expect from a hotel back home. So make a mental list of what you are looking for and pick your hotel accordingly. We were looking for a family friendly hotel, hence found a place with entertainment, pools, play areas and activities for children.

          Your checklist before travelling

          There are a few things you should know and plan for before you leave, so have a look at my note on how to prepare for your holiday in Cuba. You will find that useful.

          Everyone screams tourist trap

          Just ignore comments about all-inclusive holiday breaks in Cuba being too touristy. Who cares if the sun is out, the beach is gorgeous, service is great and everything else is taken care of. Aren’t all popular travel places touristy – give me a break, and catch some sun πŸ™‚

          Booking your day trips andΒ activities

          We noticed that booking our day trips and activities through our travel company was painful, disappointing, disorganized and expensive. The travel company shuttle simply forgot to pick us on one trip and my little daughter was so disappoint, and of course my husband was mad – and their excuse was that the email may have never reached :/

          So we booked everything through the hotel and had a much better experience. We ditched the bus trip to Havana, and instead hired a vintage car for the day with our own guide. It was a very reasonable price (much more reasonable than we expected), awesome and personalized! Our guide and drive were so friendly and informative.

          Keep in mind that you are better off booking your activities as soon as you can, so that you can pick the dates you want to do things.

          Havana

          We didn’t want to spend too much time travelling and sightseeing for once, and preferred sitting at the beach more. However, we couldn’t leave Cuba without seeing Havana. So in the middle of our trip, we took a day trip to Havana in a super cool 1957 vintage ford with a private tour guide. It was so exciting to sit in this vintage car, an absolute treat. We went through the much sought after ‘must see’ list of Havana, including buying a ton of all the popular Cigar brands we could think of.

          Tip: All along the way in between cities you find Pina Colada stalls, serving this popular cocktail in carved out pineapples, so keep some place in your tummy for that πŸ™‚

          Drink flask

          Now this is something I wish we knew before taking off. In all-inclusive resorts and hotels, they serve drinks in tiny cups and its quiet a walk to get a refill, hence carry a drink flask or a larger cup with a cover so that you can fill up and save your self walking back and forth at least 5 times. Don’t worry about getting too drunk after 5 drinks or so, because the drinks are pretty watered down. We did the Hemmingway trail and ate at local haunts.

          Travelling to Cuba: Your checklist and things to know upfront

          This has to be the best holiday we have ever had as a family. I can comfortably say that we actually relaxed and had fun. Cuba is a major holiday destination from Belgium with direct flights and all inclusive holidays pretty easily available. But do keep in mind before you set off to your break in the sun, there are some key things that you’ve got to keep in mind.

          Travelling to Cuba: Your checklist and things to know upfront

          Cuba is fantastic for a winter getaway.

          1. Check your nationality and Cuba’s relationship with that: Before you book your travel and stay, check if its compatible with your nationality. Americans travelling to Cuba have quiet a few major constraints, so be mindful if you are American. Certain nationalities require obtaining a visa (this visa is typically issued at the Cuban embassy in your country prior to travel). You can apply for this tourist visa card after you book your travel but do calculate a couple of days to get the appointment and actual visa in hand.
          2. Best time to travel to Cuba: November through March is the best time to travel to Cuba. Its not too hot, and very pleasantly warm. The sea is calm. Summer’s are pretty hot. And you might want to avoid the hurricane season.
          3. Take cash with you: It isn’t easy to find places to withdraw cash or use your credit cards. So please carry cash with you. Euros seem to have the best exchange rate. But if you have other currency don’t sweat it, but just carry cash πŸ™‚
          4. Local currency: Cuba has 2 currencies. CUC (Cuban convertible peso or β€˜Cuban dollar’) for tourists, and CUP (Cuban national peso) for locals.1 CUC = approx. 22 CUP. You can convert money at your hotel. The CUP and CUC prices won’t match up, so it’s important to not spend too much time worrying about that. When you convert to keep CUC’s at hand, do consider keeping some CUC’s handy just for tips because its quiet a culture to tip. Avoid changing money at the airport.
          5. Tipping: Remember the average monthly salary in Cuba is around 50 USD, nothing close to what you bring home per day, so do tip generously for good service. If you plan to use your credit cards, remember that credit cards are not commonly accepted, and no US credit cards work (eg. American Express or Citibank), so carry a credit card from a non-US provider. We carried our Belgian cards, and when we used it just twice, it worked fine. Don’t forget to inform your bank and credit card companies that you are travelling to Cuba, as the last thing you want are blocked cards.
          6. Print all the docs you need: Cuba isn’t tech savy, and internet access is not easy to find. If you end up finding internet, its complicated (see my note below at 8.). Once it is up and running, it crawls – so print all the documents you need before you leave for Cuba, like, your tickets, hotel confirmation, airport pick-up, any reservation confirmations, itinerary, places to see, this article, and your insurance documents.
          7. Insurance: In addition to your regular and travel insurance, you need additional insurance, so check with your travel company for guidance on that in advance.
          8. Internet: Its really funny but internet and wifi aren’t easy to find. You’ve got to locate a wifi area and buy an internet access card with codes. So don’t carry too many devices that rely on the internet. Carry an extra swimsuit instead :). We left our laptops and tabs behind.
          9. Packing: Check your baggage allowance from your airline. Our airline only allowed 10 kgs each in handbags, so we bought 2 more check-in bags, as we were travelling with a baby and were looking forward to wardrobe options for our dinners and other outings there. So consider buying check-in bags if you like to travel like Madonna. It can get pretty windy in the evenings, so carry a cardigan. Pack a couple of toilet rolls (as public toilets rarely have it) plus carry your favorite shampoo and bath gels (even if the hotel provides it – we noticed that we had allergic reactions from those).
          10. Food: You are going to get a lot of chicken, pork, banana, seafood, beans and rice. We liked the food and didn’t think it needed any extra salt or spice (unlike what other blogs and information sites said). We actually carried salt and felt like idiots! What we would say, is that, if you are travelling with family, consider carrying your favorite biscuits and nibbles, for breaks in between meals.
          11. Book your tours:  If you would like to go sightseeing, then book your  sightseeing tours as soon as you check into the hotel. We would recommend booking a private vintage car with your own tour guide (it surprisingly isn’t very expensive), otherwise you will spend hours sitting in the bus going from hotel to hotel picking up other sight-seers. We found that booking through our travel company was such a disaster (they actually forgot to pick us up and the trip was more expensive), but booking through the hotel was a very good experience, and a lot cheaper as well – but remember to book as quickly as you can.
          12. Sunscreen and insect sprays: The sun in Cuba is pretty intense so carry a pretty strong sunscreen. If you are the sun-tanning type, make sure you carry the right soothing creams so that you don’t burn. We recommend carrying an after sun lotion too is you have sensitive skin. Also don’t forget to carry insect or mosquito sprays and ointments if you get bitten – if not you are on the menu for insects at sunset.
          13. Medical or first aid bag: Carry your medical or first aid bag including band aids. It was hard to come by a band aid in our hotel despite it being a 5 star. Very disappointing.
          14. Camera’s and drone: Don’t carry sophisticated cameras, as they draw attention and might invite questioning from authorities. Also leave your pet drone at home, as their use is restricted. In fact in a lot of places there are explicit sign’s banning them. We carried our phones and got some pretty awesome pictures. So breathe.
          15. Have fun: The pace is slower compared to what you might be used to, internet access is painful, but use that as a nice excuse to have tons of fun in the sun.

          Tofu with Spinach and Chickpeas – all in an easy one-pot curry

            Our ‘beginning of year’ resolution is to eat more vegetarian food.
            And to be honest, I love that secretly because I find cooking vegetarian food easier and fuss-free to cook. So this leads me to a constant hunt to find cool, comforting, easy and fast recipes for my family.

            We loved this recipe. Its one of those forgiving one-pot recipes that needs minimum prep time, tastes awesome and a good one to slot in the middle of a busy week. It freezes well too if you want to make it over the weekend and save it for a busy weekday dinner. And guess what… my daughter hasn’t figured out that there is so much spinach hidden in the curry. Hah! win-win. πŸ™‚

            garam masala: my mum’s home made magic powder

            Feeds: 4 decently hungry people | Prep time: 10 mins | Cook time: 15 mins

            INGREDIENTS:
            1 tbsp oil
            400 gms tofu chopped
            1 white onion chopped
            1/2 tsp turmeric powder
            1 tsp cumin powder
            1 400 ml can of chickpeas (drained and rinsed)
            1 tsp garam powder
            1 400 ml can of coconut milk
            1 tsp ginger garlic paste
            pinch of sugar
            salt to taste
            2 cups spinach leaves chopped (fresh is great but frozen cubes work too)


            Hint: typically when you add cumin powder you can also add 1/2 tsp of coriander powder.

            INSTRUCTIONS:
            1. Heat oil and fry onion until golden, then add ginger garlic paste and fry a bit, add the powders and cook until oil surfaces over the paste. Add coconut milk and chickpeas – cook for 5 mins.
            2. Then add tofu, salt and sugar.


            Hint: when you use canned beans, drain and rinse out the beans using fresh water. This way you aren’t compromising the flavors of the dish with canned water.

            3. Cook for 10 mins and don’t stir too much. Add spinach a couple of minutes before you switch heat off and cover, so that the spinach wilts well.
            4. Serve with steamed rice.

            Goan Clams (Tisreo) Sukem

            Goan Clams Sukem is a hot favourite of most (if not, all) Goans. Its is typically served with Goan fish curry and rice. I love this recipe. It comforts me and Joel, when I miss family and Goa. Its easy to make and absolutely packed with flavour. My mum and nana made this recipe the best, and here is my attempt at it.

            These clams (common cockel) come from my seafood stash I bought from our trip to Honfleur, straight from the fishing boat. You can also get it in the fish section in your local supermarket or fishmonger. The Goan in me absolutely jumps with joy when I see these in the fish stall, and I cant leave without a larger bag of them. You can cook them in many different ways, but this one is my favourite.

            1/2 tsp cumin powder
            1/2 tsp coriander powder
            1 tsp chilli/paprika powder
            1 cup grated coconut (optional) [alternative: coconut powder re-hydrated with water]
            1/2 tsp ginger garlic paste
            pinch of sugar
            salt to taste
            Coriander leaves (a few sprigs)

            INSTRUCTIONS:
            1. Wash clams, remove one side of the shell, move flesh to one shell only and discard the other empty shell half.
            2. Grind coconut, turmeric, cumin, coriander, chilli powders together and set aside. Keep the paste a bit thick.
            3. Heat oil and fry onion until golden, then add ginger garlic paste and fry a bit, add the coconut mixture. [Tip: If you are not a coconut fan, simply add the other powders and substitute coconut by adding chopped tomato and a slit green chilli). Cook for 5 mins and then add the clams. Add salt to taste and a pinch of sugar. Cook for about 10 mins.
            4. Serve with steamed rice and Goan Prawn Curry. Garnish with chopped coriander leaves (optional).
